Granadilla fridge tart has such great memories for me. As a kid, I used to make it with a dear friend of mine as an easy dessert, that looks impressive. Eating it is almost like eating a little piece of tropical summer and it’s so good! Having not had it in years, I decided that it was time to bring it back! Strangely, all the recipes that I could find online had condensed milk, and I just wasn’t down with that! Fortunately we managed to find my version of our old recipe, so here it is. A kid friendly granadilla fridge tart recipe made with yoghurt, cream and jelly. Enjoy 🙂
Ingredients
500ml granadilla yoghurt
125ml fresh cream
1 packet lemon jelly
1/2 cup boiling water
2 tsp sugar
2 tblsp butter, melted
1 pkt tennis biscuits
1 tin granadilla pulp or 4 fresh granadillas / passion fruit
2 tsp sugar
2 tsp custard powder
Method
Base: Crush biscuits and add melted butter. Press firmly into a pie dish and allow it to cool in the fridge.
Filling: Dissolve jelly in boiling water and sugar (2tsp), then add yoghurt.
Beat cream until thick and fold into the mixture.
Pour filling into biscuit base and allow it to set firmly before adding the topping.
Topping: Add sugar (2tsp) to pulp and place in pan. Bring to boil.
Mix custard powder to a thin paste with water, add to pulp and cook until it thickens.
Spread over filling, place in fridge and allow it to set again.
