Chocolate is my weakness. Like, properly a weakness. Especially if I’m tired or it’s just been a long day of being mommy. In an attempt to make my chocolate snack a little bit healthier I’ve made some dark chocolate, nut and seed clusters. It still gives the chocolate taste, but also includes some healthy fats from the nuts and seeds. Of course that still doesn’t mean I should eat as many as I want, but at least they’re healthier and still delicious.
Chocolate, Nut and Seed Clusters Recipe
1/4 cup almonds
1/4 cup cashews
1/4 cup sunflower seeds
1/8 cup sesame seeds
1/8 cup pumpkin seeds
80-100g dark chocolate
Lightly chop the almonds and cashews. Fry the nuts in a dry frying pan and then set aside.
Fry the pumpkin seeds and sunflower seeds until starting to brown and then add sesame seeds.
Melt the chocolate in the microwave, on defrost, stirring every 30 seconds.
Add the nuts and seeds to the melted chocolate and drop spoonfuls of the mixture onto a baking sheet.
Place the clusters in the fridge to re-set the chocolate.
