Do you plan your Valentine’s Day in advance? Almost every year we end up waking up a day or two before and realising that we’ve made no plans yet. Of course this means all the good restaurants are already booked out and we normally end up having a picnic or making a meal at home. The funny thing is those are the meals I remember. I remember picnicing in the car below table mountain and spending our second wedding anniversary at Spur much more than I remember most of the restaurants we’ve been to.
Point is, things don’t need to be fancy! Whip up these simple Valentine’s Day Heart Cookies as a gift for your loved ones, friends or teachers and let them enjoy a homemade gift.
From one batch I made 10 double jam filled cookies and 25 double mini heart cookies.
Valentines Heart Cookies Recipe
200g butter
100g icing sugar
2 egg yolks
1 tsp vanilla essence
250g cake flour (+ extra for rolling)
strawberry jam
Beat the butter, icing sugar and egg yolks together until they are light and fluffy. Add the vanilla essence and flour and continue beating until it all holds together like a dough.
Place the dough in the fridge to chill for about and hour (more is fine). Heat oven to 180C.
Roll out the dough to about 5mm thick. Using your cookie cutters, cut out heart shapes, cutting mini hearts from the centre of half of them. Bake on a lined baking tray for 15 minutes.
Remove and allow to cool. Once cool sandwich the biscuits together with strawberry jam. Sprinkle with icing sugar.
They keep well for a few days, but if you would like them to keep even longer then sandwich them together with a a mixture of icing sugar, colouring and a little warm water.
Instead of making additional large biscuits, I cut out extra mini hearts from the left over dough to make double mini heart cookies, sandwiched together with the icing mix. These were equally as delicious.
